Ingredients : 2-3 people serving
- Chicken thigh 1 piece (300 g)
- Potato starch 3 tbsp
Seasonings
- (a) Koji Amazake 2 tbsp
- (a) Soy sauce 1 1/2 tbsp
- (a) Ginger 1/2 knob, grated
- Frying oil amount needed for deep frying
Instructions
- 1Cut chicken into generous bite-sized pieces.
- 2Put chicken and ingredients under (a) into a sealable plastic bag and allow to marinate for 15 minutes or more.
- 3Drain liquid from chicken mixture and place in mixing bowl. Coat evenly with potato starch.
- 4Bring oil to 170°C and fry chicken pieces until golden brown.
Tips
Coating chicken evenly in step 3. It will seal in the juice, resulting in crispy and tender fried chicken.
